Cassia Bark has an earthy, pungent, clove-like flavour, providing a strong spicy and warming finish.

Cassia trees can grow to over twenty feet tall and have long, oblate leaves. The bark from the trees is then harvested, stripped and dried, curling into quills as it does so.
Cassia is similar to cinnamon and is also known as Chinese cinnamon. It has a hotter, sweeter taste and is less aromatic than True Cinnamon. The bark is also noticeably thicker than true cinnamon.
Cassia Bark should be used sparingly as it adds complexity to the base flavours and manifests as a warming, earthy spiciness, prominent in the finish.
