CHAMOMILE FLOWERS – WHOLE
Chamomile Flowers if distilled, imparts a warming floral tone which sweetness becomes apparent, giving the Spirt a smooth sipping quality. These herbal yet floral flowers are daisy-like in appearance and are intensely aromatic when distilled.
Chamomile Flowers do not dissipate like violet nor dominate like lavender, they complement and soften the heart of a Spirit as opposed to simply impact the nose or overwhelm all other flavours to taste.
As a Floral Botanical used in Gin, Vodka and Tequila recipes, one of Chamomile’s biggest benefit is its ability to deal with the heat required during distillation. More delicate flowers rot or become putrid too quickly but Camomile allows Distillers the chance to extract the full set of flavours, from both the flower and the rest of the ingredients during a run, as opposed to having to finish their hearts cut sooner than would be ideal. This is especially true if used in its dried form.
