Lemon Peel is used to create a fresh, tart, citrus note whose crispness nicely offsets and compliments the heavier juniper and earthier spice notes.
Lemon Peel is kibbled into ± 4mm pieces.

As lemons are slightly different to peel than oranges. The pith of a lemon is much thinner than an orange and therefore it is easier to peel some of the fruit’s flesh, imparting that all important lemon zing.
