Recipe No.24
A peated whisky is created when the malted barley is dried over a peat fire, the components of the peat smoke that have not been completely turned into carbon dioxide and water vapour adhere to the malt.
The intensity of the peat smoke and length the malted barley is exposed, will dictate the strength of this flavour. The characteristics of the peat itself also imparts its unique flavour.
These aromatic compounds are transported through all production steps into the finished whisky.
